From the vibrant fruit complexity of Natural processes, to the clean clarity of Washed coffees, the layered sweetness of Honey processing, and the innovative depth of Anaerobic and experimental fermentations, each method works in harmony with the land and the farmers’ expertise.

Our coffees are carefully hand-picked from high-altitude farms in Sidama, where cool climates and fertile soils allow cherries to mature slowly and develop rich sweetness. Using the traditional Natural Process, whole cherries are dried under controlled sun exposure on raised beds. During this extended drying period, natural fermentation occurs inside the fruit, enhancing complexity and depth while concentrating sugars within the bean. This method produces a cup with vibrant fruit intensity, wine-like sweetness, and layered complexity, balanced by a smooth body and lingering finish—an authentic expression of Sidama’s natural processing tradition. Available varieties: 74110, 74112, 74158, 74160, and selected heirloom cultivars.
